The rollers stop the horse from getting a purchase on the branches with the molar teeth. This particular version has joints in the middle so that as the reins are used the branches collapse inwards throwing the chain free and pinching the tongue quite severely between the rollered branches of the mouth. The copper rollers encourage salivation.
